*I Cook Barefooted!* ~ Sopapilla Cheesecake


Barefoot Love!


Sopapilla, literally means, 'bread soaked in oil'.
 
Gluttony Meet Heart.
Heart Meet Gluttony.
Enjoy it while it lasts!

I know it's not good for you.
But, that's just not the point here!

*looks over shoulder for any cardiologists in the room* 

Sometimes... and I do mean, SOME times, a little gluttony is good for the soul.
Everything in moderation, I always say...
 except Brussels sprouts and Lima beans, 
but that's just me.

My son introduced us to this sweet and creamy confection a while back.
I love it when my kids LOVE to cook!
When we showed up with this Heavenly dish at a gathering of friends,
grown men wept in anticipation (not really).
Well, they did set the beer aside, 
if only long enough to grab a big spoon with which to shovel it in!

Look, I don't have all the answers!
Sometimes we eat bad things, because we're just built that way.
But what's a ball game without a hot dog and nachos?
Where's the fun if you can't drink a beer at a BBQ?
And, why the hell CAN'T we indulge in a little sugary treat once in a while?

My advice: 
Eat it! Because it tastes SO good.
Walk a little further...
to your mailbox, parking spot or to the second floor
 ...every chance you get.
And for cripes sake people, 
Take your vitamins like your mother told you.
Life is short.
Eat cheesecake!
It's all good.



Sopapilla Cheesecake
 
16 oz. cream cheese
2 cans crescent rolls
1 cup white sugar
1 tsp. vanilla extract
½ cup butter, melted
½ cup cinnamon sugar


Line bottom of a 9x13 baking dish with one can of crescent rolls.
Mix together cream cheese, white sugar and vanilla extract.
Spread over top of the crescent rolls.
Unroll the other can of crescents and place on top of cream cheese mixture.
Pour melted butter over top and sprinkle with cinnamon sugar mix.

Bake at 350 degrees for 30 minutes.

*Cut into pieces and drizzle with honey, if you like.*

    1. It's pretty darn good, Elizabeth! Though I am trying not to partake in such sweets too much, this time of year especially, what with swim season sprinting into our sluggish winter... I could not help but share this recipe with everyone! I think it's particularly yummy around the campfire.

    1. Connie, as much as I love me a Krispy Kreme glazed doughnut or a pan full of gluten and casein, it would be an allergy to seafood that would most literally break my heart, I think.

      Maybe you could just sprinkle some sugar on top of... well, maybe you could just offer them a spoonful of sugar. It does help the medicine go down. *g*

  3. I've had variations of this. I don't do a lot of bread because like Connie, I have an allergy to wheat gluten. I've learned to use other sorts of flour. If I've been good, which I usually am, I can eat some breads on the occasion.

    btw way, thank you for the tag. I haven't had the space to reciprocate. :-)

    Hey, did you get those nasty storms last night, too? We were up until 2 this morning with a tornado warnings and severe Thunderstorm warnings. Ugh. Hope all was safe with you.

    1. Sia, My niece has allergies to eggs, oats, and yes, gluten too. It's always a challenge finding recipes she can eat and will like when she and her brother visit in the summer.

      Light storms came through Union. No real damage. Very high winds here today though. The van door took off and hit me in the back of the head this afternoon! It sounds as if Branson was hit much harder!

      I was up from 2 to 5 this morning, but it wasn't due to the storms. Migraine headache... day 12 today! I'm hoping these meds the doctor gave me Monday will finally kick in tomorrow. Enough is enough already! Hope you're well too!!

    I can't believe you've been having migraines for 12 days. That's terrible! I really hope the meds do kick in tomorrow. If not, maybe that doctor needs to give you something else? Take care, Scarlett and hope you get a good night's sleep tonight. xo

      In all honesty, it may take many long walks to the mailbox for some to work off this mess of goodness! Our box is a small hike to the road. Ahh, I remember the day all I had to do was step out my front door and slip it in! *g*

      Thank you! The meds, I do believe, are finally beginning to work! I've had headaches since I was thirteen years old. Hormonal, allergy related, and tension always were the culprits. I have never had headaches like these past two weeks, or lasting this long! My husband called it The Perfect Storm this time. And it really was. Just too many factors added up all at the same time, I guess, and my body couldn't catch up. BUT, I am now on the mend! Woot!

      Good night's sleep... Here I come!

      I learned early to take full advantage of a kid who wants to cook! These chores are sometimes a fleeting interest; much like mowing the grass and driving to the store for last minute groceries. *g*

      This recipe is simple and delicious! I really need to start including photos with them, I think.
