*I Cook Barefooted!* ~ Zucchini Brownies


Barefoot Love!   



I have an odd confession to make.
Store-bought brownies often taste to me like Play-doh.

Yum!

Oh, yeah!

And there's THIS GUY.

Apparently, I'm not alone in this weirdness.


A friend gave me this recipe years ago. 
They're better than chocolate.
They're chocolate veggies!
Incredibly moist, and not like Play-doh at all.

FYI...
Did you know zucchini sometimes grow to three feet long?
Wowzer.

Don't like 'em boiled, fried or cooked up in a casserole?
I promise you.
What they don't know... makes you the winner.
Well, them too. 

By the time they realize there's 
"somethin' different" about those brownies,
they'll already be stuffing a second into their mouth!



Zucchini Brownies

2 cups sugar
1 cup oil
2 eggs
3 cups grated zucchini, unpeeled
1 tsp. baking soda
1 tsp. baking powder
3 Tbsp. cocoa
2 1/2 cups flour
1 tsp. salt
1 tsp. cinnamon
1/2 cup nuts
1 cup chocolate chips


Mix sugar, oil and eggs.
Add zucchini.
Put all dry ingredients into zucchini mixture and blend well.
Pour into a greased pan.
Sprinkle chocolate chips and nuts over top.
Bake at 350 degrees 30-40 minutes.
Cool & Frost.



Frosting

4 Tbsp. butter or margerine
1 tsp. vanilla
4 oz. cream cheese
2 cups powdered sugar
3 Tbsp. cocoa

Mix till smooth. 
Soften butter and cream cheese in microwave.
Add vanilla, sugar and cocoa.
(If too thin, add more powdered sugar.)
