*I Cook Barefooted!* ~ Summer Pork BBQ

Barefoot Love!




April Showers Bring Summer Barbeque!

I saw my first firefly of the season tonight.
They lit out over the yard; pint-sized orbs of light just out of reach.
It's early. April, ya know.
I'm not ready.
We're still busy gearing up for baseball season,
cleaning out gutters, tilling the garden, making way for Spring... 
singing, "Adios, Winter! It was nice knowing ya! Don't be so shy next year!"


But, Summer is practically on our doorstep.
Ready or not, Here it comes!
Cool green grass and kids running with jars across the lawn.
It makes my mouth water just thinking about what's cooking in the kitchen!


Fresh Squeezed Lemonade
Homemade Potato Salad
(with the skins on!)
Devilish Eggs
Roasted Ears of Corn and Asparagus
Fresh Fruit Salad
Sweet Cornbread 
(with honey butter)
 Homemade Salsa
Fruit Pies and Cobblers
Marshmallows on a stick
and
Sweet and Spicy Summer Barbeque!

Well maybe, 
just maybe...
I am ready.

Summer Pork BBQ
2 boneless pork loin roasts
1 cup of water
2 tsp. salt
2 cups ketchup
1/3 cup steak sauce
1/4 cup packed brown sugar
1/4 cup vinegar
2 tsp. lemon juice

Cook roasts in crock pot on medium low heat,
till tender and falling apart.
Sprinkle roasts with salt.
Add water.
Shred with fork and set aside.
Skim fat and drain all but 1 cup of broth.
Add meat back to pot, along with
ketchup, steak sauce, brown sugar, vinegar and lemon juice.
Cover and cook again over medium low heat for 1 to 2 hours.
Serve on kaiser rolls.

  1. Scarlett, that recipe sounds smish delish. And despite the fact that it's still rainy and cold in my pacific northwestern corner of the world I WANT it to be summer soon. Maybe I'll have to make some summer pork bbq and hope that the sun gets the message that it's time to shine!

    1. As much as I love Spring, Johanna, I would trade its early arrival for one week in Oregon!

  2. We're still escaping winter. We have put out our spring plants in the garden and I'm still covering them with frost blankets. It just snowed last week in fact...twice! Enjoy those fireflies!

    1. Like my Kentucky Grandma always said, Mike, "Don't plant your garden till after Mother's Day." Round these parts of Missouri, fireflies are waaaayyy early! I wouldn't have expected them until mid May, early June. Old Man Winter skipped out on us, but good, this year! We hardly saw any snow at all through the season. And you can bet we'll be paying for it when the skeeters come a callin'!

      But, we'll love the fireflies while they're here, all the same. Nothing jolts me back to my childhood quite like a field of flickering fireflies.

  4. You know, you really need some sort of warning posted on your recipes, Scarlett. Something like: "Warning the following post will make you hungry, and quite possibly make you run to your cupboard like a mad woman (hah!) to search for the ingredients to whip this recipe up pronto. And if said woman doesn't find those ingredients in said cupboard, she'll have to push her husband out the door with scribbled list in hand to brave the Sunday morning rush at the grocery store."

    I don't look forward to the heat of summer, but I do love the food. Of course, I enjoy the food of spring, too. And fall...and winter. Ah well.

      We sure love the summer bbq round here, too! This season, with only ONE kid in ball, I fully intend on straying away from our go-to's of brats and dogs when we're on the go! Too much pork makes my husband a limpy boy! LOL. Ummm... I mean THE Gout. *wink*

  5. This dinner sounds unbelievably delicious! And to be done in the crockpot too? That makes everything better to me; it just so wonderful to smell it cooking.

    1. It's what's for supper this week, Catherine! I think this recipe is incredibly superior to store bought bbq! And really, so easy.
