*I Cook Barefooted!* ~ Zucchini Brownies


Barefoot Love!   



I have an odd confession to make.
Store-bought brownies often taste to me like Play-doh.

Yum!

Oh, yeah!

And there's THIS GUY.

Apparently, I'm not alone in this weirdness.


A friend gave me this recipe years ago. 
They're better than chocolate.
They're chocolate veggies!
Incredibly moist, and not like Play-doh at all.

FYI...
Did you know zucchini sometimes grow to three feet long?
Wowzer.

Don't like 'em boiled, fried or cooked up in a casserole?
I promise you.
What they don't know... makes you the winner.
Well, them too. 

By the time they realize there's 
"somethin' different" about those brownies,
they'll already be stuffing a second into their mouth!



Zucchini Brownies

2 cups sugar
1 cup oil
2 eggs
3 cups grated zucchini, unpeeled
1 tsp. baking soda
1 tsp. baking powder
3 Tbsp. cocoa
2 1/2 cups flour
1 tsp. salt
1 tsp. cinnamon
1/2 cup nuts
1 cup chocolate chips


Mix sugar, oil and eggs.
Add zucchini.
Put all dry ingredients into zucchini mixture and blend well.
Pour into a greased pan.
Sprinkle chocolate chips and nuts over top.
Bake at 350 degrees 30-40 minutes.
Cool & Frost.



Frosting

4 Tbsp. butter or margerine
1 tsp. vanilla
4 oz. cream cheese
2 cups powdered sugar
3 Tbsp. cocoa

Mix till smooth. 
Soften butter and cream cheese in microwave.
Add vanilla, sugar and cocoa.
(If too thin, add more powdered sugar.)

  1. Huzzah! Brownies are my FAVORITE!! Seriously, my FAVORITE sweet!! And that's saying something, 'cos I LOVE sweets!!! Okay. I'm calming down. Breathe. Breathe. Must remember to breathe when I'm anticipating brownies. Okay. I think I'm all right now.

    These sound fanfreakingtastical. And I completely agree with you about store bought brownies. Yuck. My husband is NOT into green veggies, so I can't wait to get some vitamins in him with these! Will try it out soon and let you know. Thank you Oh-Scarlett-Amazing-Barefooted-Cooking-Goddess! xo

  2. For any doubters out there, remember carrot cake? Moist and delicious and not at all vegetabley. This sounds like the zucchini equivalent, and I bet it's as good!

    1. Mmmmmmm... Carrot Cake!

      You're right, it is just as yummy! Summer squash, like applesauce, adds moisture and healthy nutrients to our sweets... which we're gonna eat anyway. Might as well add some veggies. Add some flax seed while you're at it.

      There are so many ways to work our daily portions of veggies, nuts, and other fiber into our meals. It just takes a minute to find recipes online. Google it!

      I've read a few studies recently (just now) suggesting perhaps parents shouldn't *hide* the veggies from their picky eaters.

      I say, Oh... bull puckey! Get your kids OR your husband to eat those veggies however you can. In my, non-professional, opinion they'll be more likely to try veggies the older and wiser they get, if you're making it *fun*! What's more fun than hide n' seek!

  4. YES! My wife is an instructional assistant at school.

    Today, she is a reading coach, but she used to work in kindergarten. Neither position pays well...I mean really not well.

    Whoa, don't get me started on that.

    Anyway, near the end of the year, the teacher she worked with would bring in zucchini from her garden and make a big deal out of it. Many of the kids would make numerous comments about their dislike of zucchini. So when they learned that they would be making zucchini chocolate cake with the kids were ready to revolt.

    Rather than finding the food revolting, they all loved it! And, without fail, the teacher would receive comments from parents asking about the zucchini cake. Great post!

    1. Mark, if you could only see my feet right now... ew. Cooking isn't the only thing I do barefooted. I've been weeding around the garden fence today - barefooted. The grass is just so inviting and the dirt feels cool to my toes! It wasn't till I just 'bout stepped on a little tiny snake that I thought, *perhaps I should slip on my Crocs.

      You'd be amazed at how moist cakes and other sweets can be made with zucchini and carrots, and the like!
