*I Cook Barefooted!* ~ Lil' Cheddar Meatloaf

"MeatLoaf? 
Ew..."

This used to be the reaction my meatloaf, and I, could expect 
when we both plopped down at the supper table, exhausted.
Well, I was exhausted.
My meatloaf recipe was just plain borrr-ing!

My hands,
buried wrist deep in eggs, crackers and cold meat
saw more action with that tired old recipe
than my kid's mouths.

 As a matter of fact,
I am pretty certain it was my old meatloaf recipe
that ushered in our infamous
Green Bean Races! 

Who knew adding a little sugar and oats and cheese
would turn out to be the dinner make-over of the century
in our house!

Meat...
stuffed with cheese
and topped with goodness!
That's what I crave this time of year.
It reminds me of home.

Lil' Cheddar Meatloaf

1 egg
3/4 cup milk
1/2 cup chopped onion
1 tsp. salt
1 lb. ground beef
2/3 cup ketchup
1/2 cup brown sugar
1 1/2 tsp. mustard
1/2 cup quick oats

Beat egg and milk. 
Stir in cheese, oats, onion and salt.
Add beef and mix well.
Shape into miniature loaves.
Place on greased 13x9 baking dish.

Combine ketchup, brown sugar and mustard.
Spoon over top of loaves.
Bake uncovered at 350 degrees for 45 minutes.

  1. I love a good meatloaf with lots of goodies inside. Like you say, it's all in how you make it. It can be a big dry hamburger or a juicy, wonderful meal.

    Tonight is roast beef--I'm doing a slow cooked roast in my oven. I made a marinade yesterday of beer, crushed garlic and onion, red and black pepper shots,thyme,marjoram,fresh savory, a touch of fennel, and a bit of Olive oil. It went the fridge last night and is now going into the oven at 12:30. It'll be ready for dinner.

    1. Ha Ha! Before my friend shared this recipe, Sia, "a big dry hamburger" was all I'd ever tasted! Now it is supper I look forward to!

      Your roast beef sounds yummy! I don't think I know what red and black pepper "shots" are, though. Interesting! Verrrrry interesting.

  2. Cheddar meatloaf is a huge favorite in our house too.

    As are smokey beef tacos. Super easy way to cook chuck roast. If you google them with Martha Stewart you'll get the exact recipe!

      Mexican night in our house requires two skillets: beef for the kids, chicken for the adults. The two camps formed because "we" preferred extra goodies in ours... and because my husband has *The Gout* *G*. Too much beef is a bad thing for him, so we pick and choose how many red meat meals we eat carefully. We'll have to try this those smokey beef tacos.

  3. Coming by to meet you because I saw a comment from you elsewhere (and am now blanking on which blog, but it was the pinterest makes me feel inferior and I wrote about cookies shooting out my nose whereas your issue was chocolate milk!).

    Anyway, this sounds interesting. I don't do beef, but might try w/chicken or turkey. And I should ask where the picture is so I can pin it! ;) Nice to meet you!

      "Yet Another Reason Pinterest Makes Me Feel Inferior" by vinobaby.blogspot. *g* THAT'S where milk almost came out my nose when I scrolled down to her red velvet cake with the white coconut frosting pic she pinned on Pinterest!

      I have yet to share any pics of my recipes here... for that very reason! *Big Smile* Though they taste yummy, I am confident my photos would make LOTS of stuff come out of my peeps noses!

      I can totally see ground turkey in this recipe! Let me know if you try it. And, nice to meet you too!

  4. Now my stomach is growling, Scarlett! And there is not a cheddar meatloaf in sight. Sigh. Guess I'll have to cook it! I've topped meatloaf with ketchup (and apricot jam, but not with the ketchup, on a separate occasion!), but I've never mixed it with mustard and brown sugar. Mmmm, can't wait to try it!

    Happy Birthday to your daughter and congrats to you. On my son's birthdays, I always think back to the night I went into labor and marvel over the fact that he's now grown. Did I do that??

    1. Apricot jam? Please share!

      When I was growing up, my mom always cooked meatloaf with Heinz Chili Sauce (in a jar). I never cared for the green peppers and onions that came along for the ride.

      The mustard, ketchup and brown sugar makes a thick, sugary glaze that tastes a bit like a sweet bbq sauce. It's really very good! Especially with mashed potatoes and green beans on the side!

      We'll be celebrating our daughter's birthday through the weekend this year. We're not big into birthday parties and surprises of that nature, but she's 16 this year, and provided me a list of who to invite. *G* She's very good at asking for what she wants. I wish her future husband the best of luck. *wink*

      If I'd had your number, and it wouldn't have cost me an arm and a leg to call the island, I would definitely have picked up my kitchen phone... JUST so I could say, I was calling you with meatloaf all over my hands! Please send me your trustiest Sonic Obliterator!

      But then, I'm sure I also would have asked that you walk straight to the ocean, with your lovable little ankle biters hanging onto your legs, so that I could hear the ocean again. And THAT would have delayed supper here in Missouri... and then where would we be?! Supper-less AND without a need for a Sonic Obliterator. The point would be moot.

      Honestly. I just wrote all that so I could use the word... Moot.

    2. Thank you for coming over - I tend to write more about inner emotional stuff than meatloaf recipes, but I can say definitively that a good meal can be great for one's emotional state! I'm doing a chicken pot pie tonight for dinner but sometime this week that meatloaf is up in the rotation. My kids are gonna lurv it!
