*I Cook Barefooted!* ~ Devilish Eggs

Barefoot Love!


You know Spring is here when...

that red-checkered vinyl table cloth 
you paid fifty-cents for at that garage sale five summers ago
comes out of the closet again,
along with that fancy wicker picnic basket you always wanted
'cause you were gonna "drive into the city 
to see that FREE Shakespeare in The Park festival 
every weekend in June if it kills us..."  

And then it happens.
What happens you say?
Life. 
Life happens.

And you get all...
"Remember that one time we went to that festival in the park?"

And he gets all...
"Yeah. We suck."

And you get all... 
"Well, that drive-thru is NOT gonna be our home away from home this season!"

And he gets all...
"What's for supper hon?" 

And you get all...
*Sigh*
"I don't know. What do you want?"

And he gets all...
*Sigh*
"I'll pick something up."

And you get all...
"K"

Devilish Eggs ~ Barefoot Love!



Devilish Eggs

*Eggs, a dozen or so, boiled the way your gran'ma taught ya!
*Miracle Whip, approximately 2 Tbsp.
Mustard, approximately 1 Tbsp.
*Sugar, to taste ~ 1 or 2 Tbsp.
Paprika, a shake or two

Boil eggs; peel.
With a sharp knife, cut eggs lengthwise.
Remove the yolk with a small spoon; carefully place in small mixing bowl.
Mix all ingredients, 
EXCEPT the Paprika,
 with a fork into the yolks till smooth.
 Using the small spoon, 
put a nice dollop of your yolk mixture into each egg half.
Sprinkle with Paprika.
Chill till you eat 'em!

*So, here's the thing...
We see A LOT of fresh eggs here at Barefoot Acres!
On a good day, this time of year, we collect 'bout ten a day.
But... if you want your Devilish Eggs 
to turn out pretty (this means intact),
and you don't want to find yourself standing at the kitchen sink cussin' up a storm,
you'd best get yourself some store bought eggs for this dish.

*Miracle Whip is a wonderful drug.
 It is NOT mayonnaise!
In my humble opinion, it will always trump Mayo in Devilish Eggs.

*Sugar. 
Go slow on adding this key ingredient!
Too little... and they just won't have that Zing.
Too much... and you'll think you're eating oysters on the half shell!
(Translation: The yolk mixture turns runny and makes a mess.)

  1. I love deviled eggs! I've never tried them with Miracle Whip or sugar. I'll have to give it a try. Thanks.

      I love them, too! I can be a bit fickle though. I don't care for them when the yolk is dry or when it's bland. Also don't care for pickles in them. I know I can be a bit of a sugar-fiend, but seriously... this key ingredient is divine.

      I'm convinced though, after reading through some of the recipes in the above link to 'Taste of Home'. I'm willing to try a few of them!

      It may take a wee bit more than a pinch to really get the effect you're looking for.

      I know. I'm the devil in the Devilish Eggs recipe! Sugar is the enemy, they say. I say, keep your enemies close where you can eat them!

      I made the distinction many years ago when making my deviled eggs! It certainly does LOOK like mayo! Kind of like those veggie cookies in the grocery store LOOK like Oreo cookies... But we know they're not.

  4. Everything is better with Miracle Whip! Well, maybe not everything, but most things, right? It's a dilemma for me though, having to choose between my sweet and tangy, and my savory and salty friends. Usually I need to have all of them handy.

    Love the dialogue between you and your husband. Sounds so familiar... And hey, at least you got to the festival once!

    These Devilish Eggs sound YUM! And because these are a sweetish version I think my husband will enjoy them, too. Thanks, Scarlett x

    1. You know, I almost added a Miracle Whip commercial video to this post! I used to love those! All I could find though, was the guy in the fridge with his hands full of sandwich toppings... and an empty jar of Miracle Whip. My favorite was the guy who runs to the grocery store after closing to get his MW fix.

      And really! Plastic?! C'mon, Kraft! I liked the *klinky* sound I always got when I was scraping the bottom of the JAR! It triggered my brain to go out and buy more. I also prefer to not have EVERY single container in my fridge leaching BPAs (or whatever they're using today) into my body. I have enough estrogen, thank you vera much!

      YES! We got to see Shakespeare in The Park ONCE. This was years ago! They still do it. And we still say every Spring that we're gonna go. But June... well, let's just say we live at the Little League baseball park in our town in the summertime. Hard to get out there on a weeknight, especially living sooooo far from the big city.

      Try it. He'll like it! Send me a picture and I'll add it to my post!

      PS: You know what else is better with Miracle Whip? Smoked oyster on a saltine cracker. Yum.

    2. Hahaha! Yeah, plastic sucks!! Ah well, better for the environment, though. I actually re-use some of my glass jars for stuff. You know stuff: buttons, jelly beans, beads from broken necklaces and bracelets that I will one day re-string (stranger things have happened), and weird concoctions I make and am not sure what else to do with...

      Send you a picture of the eggs after I make them? Sure! I'm thinking of making them this weekend. Eggs are on sale! Whoot!

      I think of two things when I come across a glass jar. Well, three... Soap, Homemade Strawberry Jam, and Moonshine.

      My grandma kept stuff in jars off the back porch. Soap, among other things. *g* I wrote a post a while back titled "The Soap Jar".

      I have a drawer (or two) in my kitchen that scare me. Literally. I never know if I'm gonna get stuck with an open safety pin or cut with a loose razor blade, or inked by a ballpoint pen!

    1. We enjoyed very non-April 1st temperatures here in the mid-west today. I think we hit 95 degrees. Surely ANOTHER record temperature for Spring. It feels a bit like an oven here in our bed tonight... and I'm speaking strictly of OUTdoor heat waves! Sweets has already turned his back to the light, as I write this.

      Your Autumn has me wishing for campfires, falling leaves and Key Lime Pie. Seeing as, Thanksgiving follows falling leaves around these parts, Key Lime Pie is of course on my brain, and also making me salivate just a wee bit in anticipation.

      It's going to be a long wait. *g*
