*I Cook Barefooted!* ~ Key Lime Pie



Barefoot Love!




We moved a lot when I was little.

California 
introduced us to
Giant Redwoods, the West Coast,
and Disneyland.
I was an infant;
Breast was the meal du jour!

Alaska 
introduced us to 
a very… long… car ride,
and bean sandwiches.
We were poor. 
We had love and beans.

Florida 
introduced us to
the East Coast...


 The Florida Keys ~ That's me there; the little smiling face in the two piece!

the Sun, the Sand, and the Wind in our hair...

and it began my love affair
with my Be-lov-ed
Key Lime Pie!

In 1972,
my mom clipped a recipe from the Tampa Times.
She selected true key limes,
as the ingredient list suggested,
on a drive down to the Florida Keys.

Key limes are yellow, when ripe,
and smaller than the limes
found in these parts.
They’re tart and bitter and delicious!

The following November
we introduced 
Our Kentucky Family 
to a
Thanksgiving mouth explosion!
We've been hooked since!



There are few culinary pleasures that actually
tug on my heartstrings.
I do love me a Krispy Kreme glazed doughnut!
And, I am a sucker for a bowl of warm pasta and bread.
But it is that last Thursday in November,
every year since I was four,
that my mouth, literally, becomes a pie hole.



 “Really, it’s green?”

Yes, it is my friends!
Yes, it is.





Key Lime Pie


For Pie:
1 can Sweetened Condensed Milk
4 Egg yolks (Save the whites for Meringue!)
¼ cup Lime juice,
(Key limes preferably, but bottled lime juice will suffice!)
3 to 4 drops of Green food coloring
*Presentation folks. It's all in the presentation.*
1 Graham cracker crust

For Meringue:
4 Egg whites
1 tsp. Cream of tartar
3 Tbsp. Sugar

Beat egg yolks until light yellow.
Add sweetened condensed milk and lime juice.
Mix in drops of green, and Voila!
Pour into graham crust.

Beat all ingredients for the meringue in mixer
until stiff and peaks form.
~If you’re looking to combine dessert with your workout:
Whisk in a glass bowl and count after me…
One, Two, Ten-thousand! ~
Pile immediately on top of pie in pretty dips and waves.

Bake at 350 degrees until tips of meringue are lightly browned.

  1. Oh, Scarlett! I *love* Key Lime Pie. In a pinch Edward's frozen will do. BTW, there's some in the freezer right now. :-D

  2. I'm not a Key Lime Pie person, but that's probably because I've never tasted yours. Made from scratch is a whole different taste experience. The recipe looks pretty tempting.

  4. ZAN MARIE ~ Because it's so incredibly sweet and rich, I eat it maybe twice a year. Well, sometimes three, even after the meringue as wilted! *wink*

    CONNIE ~ Do not be fooled by most imitations out there, either served up by restaurants or in the frozen section. (Though, I'd like to try and find Zan Marie's, Edward's.)The first restaurant I worked in as a teenager, A restaurant DEDICATED TO PIES, served Key Lime Pie... Only they made it with lemon juice. Wha...?!
    NOT the same, I can assure you.

    Lydia ~ I've been making Key Lime Pies for most of my adult life. When my mom or I were absent from our Kentucky family's Thanksgiving, someone else in the family stepped up to the task! We have many Key Lime Pie Mishap stories ~ Misguided meringue running down the stove front and what not!

    I have yet to make one with real key limes, since the Florida Keys are far, far away from my home here in the mid-west. Bottled lime juice really does just as well, my mom says. And there's always the limes we find around these parts.

    Lydia, I looked for them this morning, just for fun, and found key limes in Missouri! Perhaps they were there all along, eyeballing me and my cart; searching for any crumb of evidence that a pie was looming in their tiny future, a graham, a cream of tartar... "Ooh, ooh, pick me, pick me!" ~ What the hell is a cream of tartar, anyway?

    I admit, I left them there in their little netted bags, trucked up from Mexico in their little bath of "protective" petroleum. Ew.

    Roadtrip coming, I suspect, if I am ever to have the real thing again.

    "Honey, we need to make a quick 20+ hour dash down to Key West for some research I'm working on."

    How does that sound? Think it'll work?

  7. Mmmmm.... va-ca-tion... I could stand some of that about now. Our suntanned skin from the North Carolina coast this summer has faded.

    I'm always a wee bit skeered, L.G. to try another's key lime pie. I guess I'm afraid it won't measure up to my expectations of Awesomeness.

    I'm really no cook, but selling pies, of all kinds, on the side of the road may be my true calling.

  8. I visited Florida once but didn't get a chance to try their key lime pie. I did try their Key lime ice cream though. Oh YUM!

    I'll have to try that recipe.

  14. Beautiful space, wonderful post. I love Key Lime Pie. I've made it when I lived in the States, but here in the Islands where we have REAL Key Limes It's heaven (the pie and the islands.)

  15. farawayeyes, I am so psyched you stopped in! There is just something so calm and inviting in your voice ~ and your space as well.

    Mmmmm... Real Key limes. Are they as suitable in the lip of a Corona, as they are in the pie? I'm not much of a beer drinker, but the tart pulp of a lime does help that p*sswater go down. Sorry bout that. Sometimes my filters don't work right.
